Seasonal Delight: Meatballs and Rice in Cardamom Soup

This November, we are thrilled to share a recipe designed to bring warmth and comfort: Meatballs with Rice in Cardamom Soup. Inspired by Middle Eastern flavours, this aromatic dish is an ideal way to honour Britain’s harvest season, showcasing quality Japonica rice from the EU.

This hearty recipe features tender meatballs made from ground beef and Japonica rice, seasoned with fragrant spices and herbs. The soup base, enriched with the essence of cardamom and fresh spinach, creates a creamy, comforting bowl that’s perfect for chilly evenings.

Recipe Guide: Meatballs with Rice in Cardamom Soup

Ingredients (makes 30 meatballs):

  • 200g Japonica rice
  • 1kg minced beef
  • 50g chopped fresh coriander
  • 150g finely chopped red onion
  • Salt and pepper, to taste
  • 1/2 tsp ground cumin
  • 2 eggs
  • 50g olive oil
  • 30g breadcrumbs
  • 400g crushed cardamom pods
  • 1kg fresh spinach, washed and chopped
  • Juice of 3 lemons
  • 200g plain flour
  • 200g green onions, chopped
  • Yogurt, for serving

Method:

  1. In a large mixing bowl, combine the minced beef, Japonica rice, red onion, eggs, breadcrumbs, cumin, coriander, salt, and pepper, and form into small meatballs.
  2. Bring a pot of water to a boil, add the meatballs, and simmer for approximately 25 minutes. Save the broth.
  3. In a separate pan, heat olive oil, then sauté the cardamom, spinach, flour, and green onions until aromatic.
  4. Gradually add the reserved broth, blend until smooth, and finally add the meatballs.
  5. Serve in deep bowls, with a dollop of yogurt on top.

Ideal for cosy evenings or family gatherings, this dish lets you enjoy the season’s natural bounty in every bite. Embrace the high quality of EU-grown rice with this delicious autumn meal.
